Healthy Baked Falafels Recipe

I love this falafel recipe. We’ve been making them for over ten years. Our kids won’t eat them, but they are great for a date night. We also make them sometimes and nuke some chicken nuggets for the kids. If you make these, you absolutely must make the tzatziki sauce that goes with them. Having them without is like eating plain dry spaghetti noodles. Maybe you like dry spaghetti noodles, but I promise that they’re better with sauce. These are just like that. I wanted to make them again, and I decided to bake them instead of frying them on the stovetop. (The crockpot wasn’t an option since it was 4 in the afternoon when I made my … Read more

Cucumber Salsa

How to make the best cucumber salsa recipe - This simple and easy dip uses crisp, fresh veggies and spicy peppers for the ultimate salsa!

We garden. You knew that already, right?   When I bought my house, there was a dilapidated swimming pool inside of a little fence in the back yard. The pool had fallen into such disrepair that the only viable option was to rip it out. I never replaced it.   Last year, Joe decided to take advantage of the fenced-in area and build a little garden. (We live in a slightly wooden, suburban area, so we get critters of all shapes and sizes.)   At first, the garden didn’t produce much. He mulched and fertilized and tilled. Still a … Read more
