Cut sweet potatoes into slices using a mandoline and then cut the slices into sticks about 1/3″ wide.
Toss potato sticks with olive oil to coat.
Mix spices, salt, and pepper. Sprinkle over potatoes and toss to coat.
Roast sweet potatoes until brown and crispy on the bottom, about 15 minutes. Flip and cook on the other side about 10 minutes more.
The kids like to eat these with a little maple syrup, but I eat mine plain or with a tiny bit of melted butter. I think they’re really good just the way they are, straight out of the oven.
