My friend, Jeanne, had a Pampered Chef party last week, and her consultant made this chicken. It was so good that I had two sandwiches. Really, really delicious. I love BBQ, and this didn’t disappoint. The Pampered Chef tools made it come together in under a half hour. Without those, it might take a little longer, but it’s worth it. If you want to make sandwiches, find smaller than normal rolls. You’ll eat less that way. I also think this would be delicious over rice or pasta, or even over mashed potatoes. Throw some broccoli or carrots in the microwave for a side dish, and dinner is served!
Oh! How about topping a salad with it? That would be good, too.
Smokey BBQ Chicken or Pork Sliders
Place chicken or pork in Deep Covered Baker. Brush with Garlic Oil. Sprinkle with BBQ Rub. Cut onion and pepper into quarters and add to Baker. Place in microwave with lid on for 13-15 minutes (6 to 10 minutes for the pork).
*Alternatively, you could heat the oil in a skillet. Add the meat, and saute until the meat is almost done. Add the garlic, onion, and pepper.
In a small saucepan, combine one cup ketchup, 1/4 cup brown sugar, 2 tablespoons Smoky BBQ Rub and 2 teaspoons vinegar. Bring to a oil, stirring occasionally; remove from heat.
When meat is done, remove from microwave and chop meat and vegetables with Salad Chopper right in the Baker.
*Alternatively, you could use two forks to shred the meat or simply slice it with a knife.
Pour sauce over meat and veggies and blend well.
If making sandwiches, add a slice of tomato with the chicken or a slice of pineapple with the pork. Delicious!
