Smiley Breakfast Cups – Quick and Easy Breakfast

McCain Smiles Potatoes From my new book, Coffee Filters to Cheese Graters: Creative Ways to Use Just About Everything, these Eggs-tra Special Breakfast Cups are always a big hit at my house. You can use a couple of tater tots in the bottom, but smiley potatoes are always a huge hit with my kids. That way, when you turn the cups out, there is a big smile on top of the eggs and ham. It is a nice way to start the day. The best thing about these egg cups is that they reheat nicely. You can make a big batch on the weekend, and eat them all week long. Just pop into the microwave for a few seconds to heat them up, and they're ready to grab and run!

Instructions
  1. Place one smiley potato or 3 tater tots into each muffin well.
  2. Top the potato with diced ham and shredded cheese.
  3. Beat 12 eggs together, and stir in any seasonings you prefer. I like garlic and taco seasoning or Italian seasoning or a little dill. You can also add anything you'd put in an omelet at this point.
  4. Divide the egg mixture between the 12 muffin cups.
  5. Bake a 350 for 10 minutes or until the eggs are firm.
  6. To serve, top with your favorite egg topping - A1 sauce, ketchup, Tabasco, or whatever.
