Zucchini Quiche (Gluten-Free)

We are at the point in our gardening and CSA seasons where we are swimming in zucchini. We are getting a half dozen zucchini in our farm box each week, and our own zucchini plants are producing baseball bat-sized fruits almost daily. It’s a good thing that we love zucchini in all its incarnations. Well, two of the four of us do anyway. Allie declared that she hates it just yesterday, and Grace won’t eat anything green. (Where did I get these kids from?!) My all-time favorite way to eat zucchini is stuffed with cream cheese, but I also really … Read more

Joe and I bought our gas grill the day we created our wedding registry at Sears. We knew we should wait for my bridal shower, but we just couldn’t be patient. We wanted to enjoy grilled food out on our deck as soon as the weather warmed up. We primarily grill hamburgers, chili burgers, hot dogs, chicken breasts, and veggies. Oh, and kielbasa. I can’t forget kielbasa; Joe’s dad has worked at a world famous kielbasa shop on and off throughout his retirement. My mom grills all kinds of adventurous things – pineapple, peaches, corn, and stuff I’d never … Read more

I’m seeing zucchini recipes everywhere lately. I love seeing how other people use them during this time of year when they’re coming out our ears. We’ve eaten enough zucchini this summer to make us green. Zucchini eggs. Zucchini muffins. Zucchini cake. Cheese stuffed zucchini. Chicken and cheese stuffed zucchini. Zucchini with pasta and chicken. Pasta primavera. Zucchini bake. Veggie lasagna. Ratatouille. Batter-dipped zucchini. Pan fried zucchini. Grilled zucchini. I’m sure we’ve eaten it other ways, too, but I can’t remember them all. I made up this recipe to use some of our glut of the fabulous vegetable after we tired … Read more

Chicken and Cheese Stuffed Zucchini

The last time we went to the beach, we came home to a dead garden. It had been quite hot during the week we were gone, and the plants simply baked. We wanted to keep our fledgling garden alive when we went to the beach this year, especially in light of the dozens of tomato and squash blossoms emerging in the days before we left.  It wasn’t an easy task, but Joe installed a sprinkler and a timer set for 6:30 am every day. It wasn’t easy because the water hook-up on the outside of the house leaks, and Joe … Read more

Quick and Easy Salsa Chicken Pasta

Quick and easy salsa chicken pasta

I feel like a broken record when I saw that I prefer to make food from fresh, whole ingredients that I’ve prepared myself, but that sometimes, that just doesn’t work out. For the times that we get home late or spent too much time playing outside, we need quick and easy options that come together quickly. We had the opportunity to try out Tyson Grilled & Ready Chicken Breast Strips this week, and they fit the bill perfectly. Tyson Grilled Chicken Breast & Strips are fully cooked, 98% fat-free whole breast fillets without preservatives or breading. They’re a quick and … Read more

Garden Lasagna Recipe

When I was a freshman in college, the cafeteria in the student union building served the most magnificent garden lasagna. The cafeteria was shut down during a renovation of the building, and it reopened as a fast food taco place. Or something. I don’t exactly remember. The point is that I love vegetable lasagna. I don’t care what you call it; I love lasagna with vegetables stuck into the layers. Depending on what veggies I have on hand, I may substitute different kinds of vegetables for the carrots or squash. In my personal opinion, the more veggies, the better! Print … Read more
