Cheesy Hash Brown Casserole (Gluten-free)

How to make the best cheesy hashbrown cassserole - This simple and easy recipe is perfect for breakfast or brunch, or even for dinner. Gluten-free with a corn flakes topping for a little crunch. Use shredded frozen hash browns for quick prep.

We made this casserole for dinner last week, and it was very fine. I ate the leftovers for every meal until they were gone. It really was that good. Cheese, potatoes, crunchy. How can you go wrong? You can’t. The only snag is that this is the least healthy potato dish ever. (Maybe not ever. It’s not deep fried. But close.) It’s definitely an occasional treat, not an everyday food. But then, you’re a grownup, and you can eat unhealthy potatoes anytime you want to. Have fun. Jalapeño Chicken Corn Bake (featuring #KingsHawaiian Bread)

jalapeno chicken corn bake

Joe and I are always on the lookout for our next favorite recipe. We try all sorts of things, including crockpot meals and meals prepared in the microwave. Our 2-year-old oven broke a couple of weeks ago, so we’ve been using the crockpot and microwave more than ever since then. Yes, I called a repairman, but he didn’t called back. I guess I should call someone else tomorrow. Anyway. We’ve become very resourceful where our microwave is concerned. And also? In the middle of a  heat wave, the microwave is a very smart appliance to use. It doesn’t heat up our … Read more

My At-Home Neato Burrito

neato burrito

In the Harrisburg area, we have a small restaurant chain called Neato Burrito. I discovered it when I was about 19, when it had been open only a year or so. I was instantly smitten. The concept is simple; you walk along an assembly line, making choices about the contents of your burrito. What kind of tortilla? BBQ or brown rice? Refried or black beans? Chicken, beef, or vegetarian? Cheese or no cheese? There are more choices as you walk along, including what kind of salsa you want. The salsa of the day on Tuesday and Saturday is jalepeno-feta; it … Read more

Homemade Veggie Dip

homemade veggie dip

My Pap turned 90 earlier this month. Yesterday, most of the children and grandchildren and great-grandchildren went out for dinner in his honor. We went to a restaurant that serves all of the side dishes and appetizers family-style; one of those appetizers was a vegetable tray with homemade ranch dip. It was terrific, the kind of mouth-watering terrific that makes you want to forgo your manners and lick out the whole cup. Not that I would do that, of course. I wouldn’t. Anyway, this particular dip made me think of a dip that I like to make. It’s not healthy, … Read more

Triple Chocolate Cake with Homemade Chocolate Butter Cream Frosting

triple chocolate cake with homemade chocolate buttercream frosting

Is your mouth watering? It should be. I turned a plain old cake mix and a few humble add-ins into a moist and decadent chocolate masterpiece for my dad’s birthday. I felt like Jesus, feeding the masses with a couple of loaves. Well, except that this cake didn’t feed the masses. It was so good that everyone wanted a second slice, and every crumb was gone before the sun set on my dad’s birthday. So I guess it wasn’t much like Jesus after all. You’ll love it anyway. This is the right amount of frosting for a bundt cake. If you decide … Read more

Turkey Quesadillas

turkey fajita quesadilla

Grace resists taking naps these days. She’s just so over all that baby stuff. Nonetheless, she gets very tired some days. Don’t we all? Once in a while, I can convince her to lay down in my bed – with me and Allie – so that we can encourage Allie to take a nap. Allie really resists taking naps; she always has. So, the three of us lay in my bed, pull up the covers, read a story or two, and then we are quiet and still for fifteen minutes. Most of the time, quiet and still turns into a … Read more
