If you’re not from my part of the country, pierogies are pasta filled with potato filling. Our favorite brand is Mrs. T’s, and they come in sour cream & onion, cheddar cheese, sweet potato, jalepeño, and many other flavors. I love this falafel recipe. We’ve been making them for over ten years. Our kids won’t eat them, but they are great for a date night. We also make them sometimes and nuke some chicken nuggets for the kids. If you make these, you absolutely must make the tzatziki sauce that goes with them. Having them without is like eating plain dry spaghetti noodles. Maybe you like dry spaghetti noodles, but I promise that they’re better with sauce. These are just like that. I can’t believe it’s fall already. I’m still stuck in mid-summer, but the weather is cool, the heat is on, and the leaves are starting to turn. It’s officially chili weather. Joe likes to serve chili in acorn squash bowls or over rice. I like to eat it out of a plain old bowl. We agree on one thing, though, and that’s that chili is perfect for crisp fall and winter days. This particular chili recipe couldn’t be easier to put together. It simmers for an hour, but the prep is really quick. The finished chili is good, flavorful but … Read more
Besides delicious, I don’t exactly know what to call this recipe. I have mentioned before my love of beets. I grew up eating my Grandma’s homemade and home canned pickled beets. How I love some pickled beets. Our CSA has been bursting with beets this summer, and we were looking for ways to eat them beyond plain old roasted beets. This is what we came up with. It was so delicious that I ate it for every meal (even breakfast) until it was all gone.
