Italian Meatballs with Golden Mushroom Sauce

My dear sweet friend Robyn made a comment on one of my recent posts that she has trouble with nausea whenever she doesn’t chew her food well enough. This got me to thinking about all of the trouble I’ve been having with eating – constant nausea after almost every meal – and I wondered if inadequate chewing was my issue. So I tried chewing everything way more than I thought was necessary. Guess what! The nausea stopped! Chewing really was my issue, not my new stomach hating food. Now that I have figured that out, my food choices have expanded … Read more

Easy Swiss Cheese Chicken Recipe

Easy Swiss Cheese Chicken Recipe

I spent more than ten years as a vegetarian. During that time, I learned quite a bit about common agricultural practices, and I was not thrilled. Pigs unable to lie down in their stalls, chickens stacked 5 cages high, animals that never see sunshine or grass. I can’t support that. I’ll eat meat, but I don’t want to eat that meat. A couple years ago, we discovered a local family who raises chickens and sells their extra eggs. We were giddy to find them; they even gave us a tour of the animals, enclosures, and feeding methods. We left knowing exactly how … Read more

Sausage Broccoli Mushroom Omelet Roll Recipe

sausage broccoli mushroom omelet roll recipe

Does this look good or what? My omelet rolls normally roll up a little tighter, but this one is so full of toppings that it folded in thirds instead of rolling up.  My children cook with me every time I go into the kitchen. It’s just how we do things here. When I said we were having a broccoli omelet roll, both girls came running. Grace wanted to crack the eggs (I wince but let her), and Allie wants to help with anything. Here’s Allie, helping spread toppings on the eggs. She said over and over, Helping! Helping!   You may … Read more

Stir Fry with Peanut Sauce

tofu stir fry with peanut sauce

I was a vegetarian for more than 10 years. I loved being a vegetarian. I only eat meat now because it’s easier to eat what my family eats. It’s easier to eat a balanced diet with meat in the picture. So anyway. When I was in college, I was a vegetarian, and I ate in whatever meatless options the dining hall served. Penn State’s dining halls have really great vegetarian and vegan options. I met a variety of awesome foods including BBQ seitan (so good!) and stir fry with peanut sauce. I was dubious about peanut sauce, but once I … Read more

Eggplant Pizzas

eggplant pizza

We have gotten two or three eggplants from our CSA every week for almost the entire summer. Joe makes a delicious eggplant parmesan and a lovely ratatouille, but both get stale after you’ve alternated them three or four weeks in a row. We needed something new. Enter eggplant pizza. This recipe is entirely healthy, and it is loaded with vegetables.   They were delicious. We liked them so well that we made them on back-to-back nights. We ate them all on Wednesday night and made them again on Thursday. That’s a good recipe! A note on Grace’s reaction I’m still … Read more

Balsamic Chicken with Mushrooms & Cabbage – New & Improved – featuring a $100 giveaway

balsamic-chicken-with-cabbage-and-mushrooms

Have you seen the USDA’s new food suggestions? They center around a plate, with a back-to-basics portion suggestion. The USDA now suggests that half of every meal be made up of fruits and vegetables. One quarter should be protein and one quarter should be grains, preferably whole grains. And the meal should be accompanied by a low fat milk or soy milk beverage. Isn’t that simple? I love this concept. The Recipe Country Crock challenged me to overhaul one of my family’s favorite meals to fit the new My Plate guidelines. Our Balsamic Chicken with Mushrooms recipe is definitely one … Read more
