Pierogies Alfredo

Pierogies alfredo with ham, broccoli, and tomatoes - This simple and easy recipe starts with a box of frozen pierogies and adds a jar of alfredo sauce with ham and veggies. They make a perfect side dish or main dish for a weeknight dinner.

When I was a young, single girl, I used to make pierogies all the time, and this was one of my favorite ways to cook them. First of all, it’s super easy. You just toss the ingredients together, stir the sauce through, and bake. There’s nothing to it. You don’t even pre-cook the pierogies. Second, it tastes good. You can’t go wrong with pierogies, a jar of alfredo sauce, ham, and some fresh veggies. They are delicious. I don’t eat pierogies anymore because of the carbs, but Joe and the girls still enjoy this dish. Print Recipe Pierogies Alfredo Course … Read more

Smiley Breakfast Cups

From my new book, Coffee Filters to Cheese Graters: Creative Ways to Use Just About Everything, these Eggs-tra Special Breakfast Cups are always a big hit at my house. You can use a couple of tater tots in the bottom, but smiley potatoes are always a huge hit with my kids. That way, when you turn the cups out, there is a big smile on top of the eggs and ham. It is a nice way to start the day. The best thing about these egg cups is that they reheat nicely. You can make a big batch on the … Read more

Western Waffle Quiche

It’s a Week of Waffles at Feels Like Home! Being that I’m a Chief Waffle Officer, I’ll be posting waffle recipes featuring Eggo Waffles all week from April 1 to April 7. I’ll share some breakfast, lunch, dinner, snack, and dessert recipes, so make sure you come back each day for my most recent creation! (In the interest of disclosure Eggo Waffles are not gluten-free. I did eat two of these quiches, and they were delicious.) When I moved out of my parents’ house, I didn’t know how to cook. It took me most of a year to figure it out, and it happened mostly because … Read more

Ham and Rice with Apples – Leftover Ham Recipe

leftover ham recipe

What’s the best thing about any big, family meal? Besides spending time with your nutty family, I mean. Don’t worry. We all have one. The best thing isn’t having a clean house (for five minutes) or having sleepy, worn out children after an afternoon of togetherness. They’re both nice, but not the best thing. It’s leftovers. I eat leftovers almost every single day for lunch; we intentionally make enough food for two meals each time we cook. But then after a really big meal, we’re still eating leftovers two or three days later. I get completely sick of those leftovers. … Read more

Hoagie Dip

Now that I’m lactating instead of gestating, I can eat all of the foods I avoided during pregnancy – cold cuts, hot dogs, soft cheese, and a little Mountain Dew. I’m livin’ large. And if you believe that… Anyway, I avoided this dip when I was pregnant because it’s served cold and full of deli meat, but Joe and our friends gobbled it down. They raved about it, and it’s become a staple at our monthly get togethers.
