Grilled Stuffed Burritos with Chicken, Feta, and Sargento Mexican Cheese

These burritos are like the pinnacle of food for Joe and me. They’re stuffed with everything imaginable – shredded chicken, couscous or rice, black beans, corn, Mexican blend cheese, salsa, Greek yogurt or sour cream, and feta cheese. Sure, fancier food is nice, but these burritos are something we could eat day in and day out, all the time. We love them. They’re the pinnacle of food for us because they’re like the burritos we get at a local restaurant called Neato Burrito. I’ve written about Neato Burrito before as we’ve tried on several occasions to recreate their yumminess at home (partly … Read more

CrockPot Mediterranean Chicken with Feta and Black Olives

CrockPot Mediterranean Chicken with Black Olives and Feta Cheese

Olives are ubiquitous at my house. They’re always on the table. Special occasions call for olives. Sundays call for olives. We eat olives just about every day. My kids’ favorite part of black olives is putting them on their fingers and pretending to be monsters. I’m not saying you have to do that to make this recipe, but if you feel so inclined, it definitely adds to the charm. Anyway, we tried this recipe recently and loved it. After a day in the crock-pot, the chicken is fall apart tender, the potatoes are perfect, and the feta and olives add … Read more

Sun-dried Tomato, Basil, Bacon, and Feta Omelet

how to make the best simple and easy omelets - This recipe uses sun-dried tomatoes, bacon, basil, and feta cheese to make a mouthwatering omelette that is sure to delight breakfast, brunch, lunch, and dinner crowds! It is healthy and low carb.

As I mentioned, I attended the Blogalicious Weekend (a blogging conference) in Washington, DC this past weekend. I have many thoughts rattling around in my brain as the result of that conference. I may share in the days ahead; I may not. At any rate, Blogalicious was awesome. The people were fabulous, and the hotel was palatial. Every event was brilliantly planned, and the food was sumptuous, better than any conference food I’ve ever eaten. Oh, the food. On Saturday night, Aunt Jemima sponsored a late night breakfast for dinner meal that featured Chef Aaron McCargo, Jr, better known as … Read more

Quick and Easy Black Bean Burritos

The best vegetarian black bean burritos recipe - These quick and easy wraps have beens, rice, and corn with Mexican spices and make the perfect dinner or lunch. Wrapped in a tortilla. Could be gluten-free and vegan with a few modifications.

It’s probably obvious, but we love Mexican-inspired meals around here. Our favorites at the moment are grilled burritos, BBQ chicken enchiladas, cheese and onion enchiladas, spicy beans and rice, and breakfast burritos. These quick and easy black bean burritos are quickly gaining favor, too. I like them because they come together in about five seconds (okay, a little more than that, but not much), and Joe likes them because they remind him of one of our favorite food joints, Neato Burrito. It’s a bonus that they don’t heat up the house. Even Grace likes them, as long as we use mild … Read more

Roasted Beets with Chicken and Noodles

Besides delicious, I don’t exactly know what to call this recipe. I have mentioned before my love of beets. I grew up eating my Grandma’s homemade and home canned pickled beets. How I love some pickled beets. Our CSA has been bursting with beets this summer, and we were looking for ways to eat them beyond plain old roasted beets. This is what we came up with. It was so delicious that I ate it for every meal (even breakfast) until it was all gone. My Favorite Greek Salad

There is a groundhog devouring our cucumber plants, so we haven’t harvest a single one yet. Lots of zucchini, loads of leeks, handfuls of green beans, but not a single cucumber. I’m sad about the lack of cucumbers. They’re one of my favorite veggies. Ideally, the fresh ingredients for this recipe could come from your garden. If you don’t have a garden, or a large rodent is eating yours, get them from a local farm stand if you can. They’ll taste better than the ones at the grocery store.
