Quick & Easy Homemade Cheesy Meatballs

How to make the best homemade DIY cheesy low carb keto meatballs recipe - Healthy because they're baked in the oven. Great for spaghetti with sauce or on their own. Simple and easy with Italian breadcrumbs. Typically made with beef but could be made with turkey or pork or a mixture.

I realized recently that I have posted nary a recipe since my bariatric surgery in April 2017. It’s not that we stopped eating, nor that we have stopped trying new recipes.  I just haven’t been as into food since my surgery, if that makes any sense. I haven’t thought about it as much. I just show up to the meal, and I eat, and then I leave the table and leave the food behind. Except, with the flare up of my food addiction over the last six months, I sort of obsessed about some foods night and day, but those … Read more

How to Cook an Egg in a Hole for Your Valentine

I never ate an egg in a hole before I made them for my kids last week. Even then, I only ate their scraps. I’m not sure why, but my mom never made them for us when we were kids. I love fried eggs, though, and I like buttered toast a lot (gluten-free toast for me, thanks), so I think they are a nice treat. My kids eat one thing for lunch day after day: chicken nuggets. As much a failure of my imagination as their pickiness, their lunch choice is easy but bugs me greatly. Their idea of variety … Read more

Pumpkin Pie with Pecan Crumb Topping

Pumpkin pie says Thanksgiving to me. It’s not my favorite pie (that would be pecan), but I’m never able to leave it off of my Thanksgiving menu. This recipe is the best pumpkin pie I’ve ever eaten, due mostly to the thick layer of pecan crumb that I dribble over the pumpkin before baking. It could also have something to do with the whipped topping I dollop on top. This recipe and 11 others appear in Your Best Thanksgiving Ever!, the ebook I published in October. All 12 will grace my table this Thursday.   Print Recipe Pumpkin Pie with … Read more

Baked Apple Pecan Pancakes

baked apple pecan pancake

We have breakfast for dinner very, very rarely. There’s no reason in particular; we all love breakfast foods. It’s just that we normally eat our breakfast foods for breakfast. At this stage in my pregnancy, I am hungry. Starving. Almost all the time. Even though I’m constantly hungry, I’m experiencing intense food aversions. A lot of the foods we’d normally consider for supper are making me nauseous. In many cases, the mere idea of the foods is making me nauseous. I can’t explain it. I have been eating a lot of baked potatoes, but my poor family is craving some … Read more

Healthier Meatloaf

I’m in the mood for some comfort food, and nothing is more comforting than A1 sauce slathered over a big hunk of meatloaf. I don’t make meatloaf, mind you. This is 100% Joe’s department. Raw meat is so not my thing. We’ve never really loved turkey meatloaf, but we do try to cut fat and eat healthier foods. This version combines moist, juicy ground beef with ground turkey for a lighter twist on the original.  We both really like this version of meatloaf. We’ve been using this recipe for the duration of our marriage, but I don’t know where it … Read more

Honey‐Mustard Kielbasa Wraps

My father-in-law works at a kielbasa shop on and off. He’s retired, and he goes in to help out at the shop to help out during the busy times. The kielbasa from this shop is the best I’ve ever eaten. Ever. So delicious. I received this recipe from Swanson. They suggested that it would be great tailgating food, but I also think it would be perfect finger food for holiday parties.
