I love Mexican food in all varieties. It has been a little challenging to eat Mexican since my bariatric surgery, but I am still able to find good things to eat. This “lasagna” is one of those very good things. While my family eats this dish the way it’s presented in the recipe, I eat only the filling. One of Grace’s favorite suppers these days is crockpot potato chowder. She would eat it every day if we let her. Joe really likes corn chowder, so I started looking for a recipe that looked good. Unfortunately, most corn chowder recipes call for creamed corn, a flavor I really dislike. Not able to find a decent creamed corn free recipe, we tweaked our faithful potato chowder recipe a bit. It’s probably obvious, but we love Mexican-inspired meals around here.
