Sweet Balsamic Pork Roast in the Instant Pot

How to make a pork roast in an electric pressure cooker - This sweet balsamic pork loin or shoulder in the Instant Pot is so simple and easy but so delicious! It is good for Whole 30, low carb, and keto if you substitute the sugar for Splenda or stevia. Can be made boneless or with the bone. Balsamic vinegar makes perfect gravy.

We have gotten into a bit of a recipe rut lately. We have so many recipes at our disposal (over 350 on my blog!), but because I eat a bariatric diet with almost no carbs, our options are pretty limited. It’s always 4 ounces of a protein and 4 ounces of a vegetable. We made up a recipe binder months and months ago with our favorite bariatric-friendly recipes listed out in dividers by type of meat, and that does help because either Joe or I can page through our favorites and pick something that we haven’t had in a while. … Read more

Sweet Chili Sauce

This homemade sweet chili sauce recipe is easy to put together and so tasty! It’s sweet and spicy and you will love to dip everything in it from french fries to chicken kabobs, and you can also make it thinner to pour over stir fry! We used sambal oelek for this dish. It is an Asian staple made from ground red chile peppers in a vinegar sauce. We have grown to love it ever since using it in a General Tso’s Chicken recipe (which I will share soon) last year. I think it’s the perfect pepper source for this sauce. … Read more

Cheesy Vegetable Soup

We try to cook a new recipe every week or two. It keeps our dinner rotation fresh and interesting, and it allows us to sample all different kinds of cuisine. With this in mind, Joe and I were excited to join a Sargento® campaign where participants have to create a recipe using a secret basket of ingredients. What a fun project! Talk about exciting! So the challenge is to create a comfort food recipe using the following ingredients: Sargento Sharp Cheddar Fine Cut Cheese Cauliflower Cremini mushrooms (sometimes called baby bellas or baby portabellos) Leeks When I think of comfort … Read more

Cheesy Hash Brown Casserole (Gluten-free)

How to make the best cheesy hashbrown cassserole - This simple and easy recipe is perfect for breakfast or brunch, or even for dinner. Gluten-free with a corn flakes topping for a little crunch. Use shredded frozen hash browns for quick prep.

We made this casserole for dinner last week, and it was very fine. I ate the leftovers for every meal until they were gone. It really was that good. Cheese, potatoes, crunchy. How can you go wrong? You can’t. The only snag is that this is the least healthy potato dish ever. (Maybe not ever. It’s not deep fried. But close.) It’s definitely an occasional treat, not an everyday food. But then, you’re a grownup, and you can eat unhealthy potatoes anytime you want to. Have fun. Beef and Green Beans | A Quick and Easy Weeknight Recipe

Green beans are iffy at this time of year, so when we see nice ones, we always buy them to make beef and green beans. Joe and I have been eating this a lot lately. We both love it, and it is quick and easy to throw together after work. I personally think this recipe is better than the beef and green beans or chicken and green beans at the local Chinese restaurant. It has a lot more flavor.       Print Recipe Beef and Green Beans Prep Time 10 minutes Cook Time 20 minutes Servings Ingredients 1/2 pound ground beef2 … Read more

Easy Swiss Cheese Chicken Recipe

Easy Swiss Cheese Chicken Recipe

I spent more than ten years as a vegetarian. During that time, I learned quite a bit about common agricultural practices, and I was not thrilled. Pigs unable to lie down in their stalls, chickens stacked 5 cages high, animals that never see sunshine or grass. I can’t support that. I’ll eat meat, but I don’t want to eat that meat. A couple years ago, we discovered a local family who raises chickens and sells their extra eggs. We were giddy to find them; they even gave us a tour of the animals, enclosures, and feeding methods. We left knowing exactly how … Read more
