Cheesy Hash Brown Casserole (Gluten-free)

How to make the best cheesy hashbrown cassserole - This simple and easy recipe is perfect for breakfast or brunch, or even for dinner. Gluten-free with a corn flakes topping for a little crunch. Use shredded frozen hash browns for quick prep.

We made this casserole for dinner last week, and it was very fine. I ate the leftovers for every meal until they were gone. It really was that good. Cheese, potatoes, crunchy. How can you go wrong? You can’t. The only snag is that this is the least healthy potato dish ever. (Maybe not ever. It’s not deep fried. But close.) It’s definitely an occasional treat, not an everyday food. But then, you’re a grownup, and you can eat unhealthy potatoes anytime you want to. Have fun. Jalapeño Chicken Corn Bake (featuring #KingsHawaiian Bread)

jalapeno chicken corn bake

Joe and I are always on the lookout for our next favorite recipe. We try all sorts of things, including crockpot meals and meals prepared in the microwave. Our 2-year-old oven broke a couple of weeks ago, so we’ve been using the crockpot and microwave more than ever since then. Yes, I called a repairman, but he didn’t called back. I guess I should call someone else tomorrow. Anyway. We’ve become very resourceful where our microwave is concerned. And also? In the middle of a  heat wave, the microwave is a very smart appliance to use. It doesn’t heat up our … Read more

Roasted Beets with Chicken and Noodles

Besides delicious, I don’t exactly know what to call this recipe. I have mentioned before my love of beets. I grew up eating my Grandma’s homemade and home canned pickled beets. How I love some pickled beets. Our CSA has been bursting with beets this summer, and we were looking for ways to eat them beyond plain old roasted beets. This is what we came up with. It was so delicious that I ate it for every meal (even breakfast) until it was all gone. In my house, Food Fit for a King means one thing. Seafood. Joe loves seafood. Crabs, scallops, clams, shrimp, and fish. He loves it all. In preparing to write this post, I asked him what I could make him for a special Father’s Day feast. “Uh, I dunno,” he answered. Every single time I asked. I thought about making him a seafood stew, but I wasn’t sure I could handle it. Seafood isn’t really my thing, and all that aroma would make me gag. Then I remembered that Joe likes jambalaya. There is a restaurant here that serves a spicy … Read more

Jamaican Chicken Nachos

How to make simple and easy Jamaican chicken nachos recipe - These are the best spicy homemade nachos! Quick recipe, good for weeknight dinner!

For the last couple of weeks, I have been unapologetically devouring comfort food. Lots of it. Hot Pockets, pizza, ice cream, baked potatoes with cheese, French fries. I have not exactly been the picture of healthy eating. That’s not the whole story, really. Sometimes, Joe makes healthy food like potato chowder or spaghetti with chicken, and I eat that, too. But if I have a choice, I’ve been really hungry for the less than healthy comfort stuff. I think it has something to do with pregnancy. It’s a good excuse. Several years ago, I hosted a Pampered Chef party, and … Read more

Chili Chicken with Cornmeal Dumplings

Joe surprised me with this recipe last week.
He cooked it one night just to pack it in our lunches. It wasn’t left over; we never did eat it for dinner. He just made it for our lunches.
Have I got a good guy or what?
Anyway, I never ate chili like this before, so it was different and very good.
