BBQ Chicken Enchiladas

This recipe includes homemade enchilada sauce. You can, of course, use a can of pre-made enchilada sauce, but it will not be as flavorful or delicious as the homemade. I promise.  The homemade enchilada sauce takes about ten minutes to prepare, and it will make your enchiladas so very delicious.   Print Recipe BBQ Chicken Enchiladas Course Main Dish Cuisine Mexican Servings Ingredients 28 oz enchilada sauce see recipe above or a 28-ounce can of commercial sauce, but really – why would you let someone else season your enchilada sauce when making it is so quick and easy?1/2 cup BBQ … Read more

BBQ Chicken Waffle Sandwiches – Updated Chicken & Waffles

BBQ Chicken Waffle Sandwhices

It’s a Week of Waffles at Feels Like Home! Being that I’m a Chief Waffle Officer, I’ll be posting waffle recipes featuring Eggo Waffles all week – from April 1 to April 7. I’ll share some breakfast, lunch, dinner, snack, and dessert recipes, so make sure you come back each day for my most recent creation! (In the interest of disclosure – Eggo Waffles are not gluten-free. In most cases, my family enjoyed my waffle treat while I ate a gluten-free version of the recipe.) I knew I wanted to try some variation of chicken and waffles during our Week … Read more

Sausage Broccoli Mushroom Omelet Roll Recipe

sausage broccoli mushroom omelet roll recipe

Does this look good or what? My omelet rolls normally roll up a little tighter, but this one is so full of toppings that it folded in thirds instead of rolling up.  My children cook with me every time I go into the kitchen. It’s just how we do things here. When I said we were having a broccoli omelet roll, both girls came running. Grace wanted to crack the eggs (I wince but let her), and Allie wants to help with anything. Here’s Allie, helping spread toppings on the eggs. She said over and over, Helping! Helping!   You may … Read more

Chicken Salad Pizza

We eat a lot of homemade pizza. Weekly, sometimes more, Joe throws a few ingredients into my big stand mixer, and he whips up a pizza crust. Joe’s pizza crusts are amazing. They are thick and chewy, but the outside and edges get a little crispy and crunchy. They brown perfectly. I’m salivating even thinking about his homemade pizza. The one we had this week was especially tasty because it was not a typical pizza. Lettuce, ranch dressing, and shredded chicken topped his fabulous crust this time. Last week, I we got a new couch. Behind the old couch, we … Read more

Zucchini Eggs

How to make the best zucchini eggs recipe for breakfast or brunch - This simple and easy omelette or frittata uses fresh veggies to make a healthy, paleo, low carb, gluten free dish. Sprinkle with shredded cheese to serve.

Earlier this week, I cooked eggs for Gracie and I to eat for brunch. I prefer my eggs over hard, so that’s how I made them. This morning, Gracie requested yellow eggs. I guess that was an unsubtle hint that she prefers her eggs scrambled. I didn’t want to eat just a scrambled egg, so I threw some fresh veggies in the pan to sauté. I intended to make a frittata, but it stuck to the pan and turned into scrambled eggs with veggies. The results were delicious.   Delicious! Leek Tart

Not too long ago, I followed a link from a site that I love to a blog called Storm of Thoughts (no longer a live site). I’d never been there before, and I thought I’d have a look around. I loved it and subscribed so that I wouldn’t miss any new posts. My favorite post on Storm of Thoughts was for this Leek Tart. Chrissy’s pictures were gorgeous, and I knew this was just the kind of dish I’d love to cook and eat. I decided to prepare it for Easter dinner. I’m glad I did. It was my favorite … Read more
