Eggplant Lasagna

The best simple healthy eggplant lasagna recipe - This easy, vegetarian, low carb, gluten free veggie lasagna is meatless (but meat can be added if you want) and is perfect for a Whole30, paleo, or keto diet. It's made with ricotta and baked to bring all the flavors together. The recipe calls for eggplant, but you could substitute zucchini instead.

One of my requirements for food is that it be high in protein and very low in carbs. This is life as a bariatric patient, but it’s also a very healthy way for anyone to eat.
