Sausage Broccoli Mushroom Omelet Roll Recipe

sausage broccoli mushroom omelet roll recipe

Does this look good or what? My omelet rolls normally roll up a little tighter, but this one is so full of toppings that it folded in thirds instead of rolling up.  My children cook with me every time I go into the kitchen. It’s just how we do things here. When I said we were having a broccoli omelet roll, both girls came running. Grace wanted to crack the eggs (I wince but let her), and Allie wants to help with anything. Here’s Allie, helping spread toppings on the eggs. She said over and over, Helping! Helping!   You may … Read more

Stir Fry with Peanut Sauce

tofu stir fry with peanut sauce

I was a vegetarian for more than 10 years. I loved being a vegetarian. I only eat meat now because it’s easier to eat what my family eats. It’s easier to eat a balanced diet with meat in the picture. So anyway. When I was in college, I was a vegetarian, and I ate in whatever meatless options the dining hall served. Penn State’s dining halls have really great vegetarian and vegan options. I met a variety of awesome foods including BBQ seitan (so good!) and stir fry with peanut sauce. I was dubious about peanut sauce, but once I … Read more

Garlic Chicken Stir Fry

The biggest thing I learned from my last weight loss attempt was that small changes are more likely to become permanent changes than huge life-altering ones: Parking further from the door when we’re out. Drinking water most of the time. Walking to Grandma’s house instead of driving. Small changes. I’ve recently been trying to increase our vegetable intake. Instead of tossing all of our pasta and potatoes in favor of meat and eggs – cause that would last all of three days – we have adjusted our existing recipes (like we did with balsamic chicken with mushrooms and cabbage). Joe … Read more

Broccoli, Chicken, Cheese, and Rice Casserole

The best broccoli, cheese & rice main dish casserole recipe - This simple and easy recipe uses Velveeta and shredded chicken to make a rich and creamy casserole. Use fresh or frozen broccoli and bake.

Originally posted on March 21, 2009. I’ve changed the recipe a bit since then. I do not know where this recipe came from. I got it from a friend, who got it from a friend, who’d also gotten it from a friend. It’s like a chain letter, only you’ll love it. Broccoli, Cheese, and Rice Casserole is supposed to be a side dish. It’s delicious and flavorful. We never eat it as a side dish any more. When we make this, we open a can of shredded chicken and call it a meal. This is equally good with frozen … Read more

Garden Lasagna Recipe

When I was a freshman in college, the cafeteria in the student union building served the most magnificent garden lasagna. The cafeteria was shut down during a renovation of the building, and it reopened as a fast food taco place. Or something. I don’t exactly remember. The point is that I love vegetable lasagna. I don’t care what you call it; I love lasagna with vegetables stuck into the layers. Depending on what veggies I have on hand, I may substitute different kinds of vegetables for the carrots or squash. In my personal opinion, the more veggies, the better! Print … Read more

Quick and Easy Homemade Stir Fry

Summer is quickly approaching, and the Feels like Home family is gearing up for the glut of fresh vegetables that will soon inundate our kitchen, dining room, patio, and back yard. Joe and I have been discussing our summer plans. We are going to minimize our dependence on grocery stores in favor of smaller, more local, and more sustainable options. We’re also going to decrease our meat intake, instead focusing on the wealth of summer veggies. Joe suggested a summer stir fry like the one we had for dinner tonight. I could eat this (or some variation of it) every … Read more
