When I was a young, single girl, I used to make pierogies all the time, and this was one of my favorite ways to cook them. First of all, it’s super easy. You just toss the ingredients together, stir the sauce through, and bake. There’s nothing to it. You don’t even pre-cook the pierogies. Second, it tastes good. Several times over the last few years, Joe and I have tried to switch to whole grain pasta. There are so many reasons to switch. Whole grains are healthier in general. The USDA’s MyPlate guidelines recommend making at least half of your grains whole grains. We have gotten two or three eggplants from our CSA every week for almost the entire summer. Joe makes a delicious eggplant parmesan and a lovely ratatouille, but both get stale after you’ve alternated them three or four weeks in a row. We needed something new. Enter eggplant pizza. Healthier Meatloaf

I’m in the mood for some comfort food, and nothing is more comforting than A1 sauce slathered over a big hunk of meatloaf. I don’t make meatloaf, mind you. This is 100% Joe’s department.
