Quick and Easy Gluten-Free Cheesy Chicken with Black Beans and Rice

Quick and Easy Gluten-Free Cheesy Chicken with Salsa Beans and Rice

This recipe was inspired by the Cheesy Chicken Monterrey that I shared two weeks ago. That recipe was part of a program sponsored by Knorr Recipe Sides. The idea was to create a full meal around one of their pasta and rice side dishes. It worked really well, and the result was a flavorful, quick and easy meal. Unfortunately, I couldn’t eat the finished dish because Knorr Recipe Sides are pasta and rice mixed together. Good for flavor, bad for gluten-free diners. The recipe is so easy that making it gluten-free was really simple. Joe doubled the ingredients for the … Read more

Stir Fry with Peanut Sauce

I was a vegetarian for more than 10 years. I loved being a vegetarian. I only eat meat now because it’s easier to eat what my family eats. It’s easier to eat a balanced diet with meat in the picture. So anyway. When I was in college, I was a vegetarian, and I ate in whatever meatless options the dining hall served. Penn State’s dining halls have really great vegetarian and vegan options. I met a variety of awesome foods including BBQ seitan (so good!) and stir fry with peanut sauce. I was dubious about peanut sauce, but once I … Read more

Quick and Easy Black Bean Burritos

The best vegetarian black bean burritos recipe - These quick and easy wraps have beens, rice, and corn with Mexican spices and make the perfect dinner or lunch. Wrapped in a tortilla. Could be gluten-free and vegan with a few modifications.

It’s probably obvious, but we love Mexican-inspired meals around here. Our favorites at the moment are grilled burritos, BBQ chicken enchiladas, cheese and onion enchiladas, spicy beans and rice, and breakfast burritos. These quick and easy black bean burritos are quickly gaining favor, too. I like them because they come together in about five seconds (okay, a little more than that, but not much), and Joe likes them because they remind him of one of our favorite food joints, Neato Burrito. It’s a bonus that they don’t heat up the house. Even Grace likes them, as long as we use mild … Read more

Chicken and Cheese Stuffed Zucchini

The last time we went to the beach, we came home to a dead garden. It had been quite hot during the week we were gone, and the plants simply baked. We wanted to keep our fledgling garden alive when we went to the beach this year, especially in light of the dozens of tomato and squash blossoms emerging in the days before we left.  It wasn’t an easy task, but Joe installed a sprinkler and a timer set for 6:30 am every day. It wasn’t easy because the water hook-up on the outside of the house leaks, and Joe … Read more

Faux Stir Fry with Basmati Rice

The Sweet Balsamic Vinaigrette that we bought at the Farm Show is so good that we’re making up recipes to use it. This recipe is one of those. I asked Joe what we had in the pantry, and he rattled off a few things. On the list was a 15 pound bag of basmati rice we’d purchased from Sam’s Club a while ago but never opened. Not knowing how to cook it or what to cook it with, I asked Joe to follow the instructions on the bag and make a cup. In the interest of time (and because Grace … Read more

Kheer

Have you ever met someone that you knew was a kindred spirit as soon as you met, Dear Reader? I have, and my kindred spirit is moving to California on Wednesday morning. I’m sad to see her go. My friend, Megan, is from Bangladesh, and several of us saw her away tonight with a dinner at her favorite Indian restaurant. Megan ordered us a magnificent spread of Indian food and we all passed the dishes and ate family-style. Aside from my child running amok for most of the meal, it was glorious. Every single dish was spicy and flavorful. The … Read more
