Cheese & Green Chile Oven Omelette

How to make a quick and easy oven omelette recipe with eggs, cheddar and cottage cheese and green chiles. Makes a simple low carb, keto, and paleo breakfast casserole without potatoes or bread. Perfect for busy families for mornings, breakfast, brunch, lunch, or even dinner. Could add bacon, baked ham, or sausage for a little extra oomph, but the vegetarian version is awesome on its own.

I have always eaten a lot of eggs. Starting when I was a little girl, my sister and I would walk to Old Grandma’s house (just down the dirt road a stretch or over the hill and across the field) and eat 2 fried eggs – yolks broken and hard – for breakfast with Grandpa. Later, I ate fried eggs in a restaurant when my dad took my little sister and I for breakfast. Then, when I became a vegetarian in college, I ate a whole lot of eggs as they were a reliable source of protein. When I moved … Read more

Zucchini Sausage Egg Muffins Recipe (Gluten-Free & Low Carb)

How to make low carb gluten-free breakfast muffins with eggs, sausage, and zucchini - This quick, simple, and easy recipe has a ton of keto protein and is great for breakfast, brunch, lunches, or snacks.

One of the things I have consistently eaten since my bariatric surgery in April 2017 is egg muffins. At first, after my surgery, I could only eat one egg muffin and that was it. Now, I usually eat two or three along with some veggies, and it’s a perfect high protein meal for breakfast, lunch, or even a snack. The thing I love most about egg muffins is that they’re quick and easy – both to make and to eat. They make a great on-the-go meal for rushed mornings or packed lunches. This recipe comes from Irena Macri of Instant Pot … Read more

Healthy Baked Falafels Recipe

I love this falafel recipe. We’ve been making them for over ten years. Our kids won’t eat them, but they are great for a date night. We also make them sometimes and nuke some chicken nuggets for the kids. If you make these, you absolutely must make the tzatziki sauce that goes with them. Having them without is like eating plain dry spaghetti noodles. Maybe you like dry spaghetti noodles, but I promise that they’re better with sauce. These are just like that. Chocolate Cherry Cake (Gluten-Free)

I almost didn’t post this amazing recipe, my friend. My gluten-free chocolate cherry cake sounds delicious (and is!) but looks ugly. I mean, truly hideous. It’s so bad that I didn’t even take a picture of the whole thing. What I have above is as good as it gets. As usual, my foibles make good learning experiences for you. I did some research after my regrettable mistake and found a way for you to make this cake Pinterest-worthy. I have included those instructions in the recipe below. Now, on with the post I wrote as the cake was baking (thus, … Read more

Zucchini Quiche (Gluten-Free)

We are at the point in our gardening and CSA seasons where we are swimming in zucchini. We are getting a half dozen zucchini in our farm box each week, and our own zucchini plants are producing baseball bat-sized fruits almost daily. It’s a good thing that we love zucchini in all its incarnations. Well, two of the four of us do anyway. Allie declared that she hates it just yesterday, and Grace won’t eat anything green. (Where did I get these kids from?!) My all-time favorite way to eat zucchini is stuffed with cream cheese, but I also really … Read more

Cherry Almond Cake (It’s Gluten-Free but You Won’t Mind)

Cherry Almond Cake - Gluten-Free

Any time you use cherry and almond in the same sentence as dessert, I am right there with you. I adore cherry almond anything. I may even like cherry almond better than chocolate. Tough call. Stay with me through this next part. I have to tell you why I came to have this cake. Or just skip to the bottom. That’s where the recipe is. Yesterday, I explained how Allie got what nearly amounted to a birthday non-party for her third birthday whereas Grace had two pretty elaborate parties for her third birthday. With that in mind, let’s talk about … Read more
