Homemade Breakfast Burritos

My dad took us out for breakfast on the weekends for as long as I can remember.

When I was small, we went to the donut shop. As we became teenagers, we went to the dirty truck stop down the road.

As much as I complained, I really treasure some of the times I spent sitting next to the breakfast counter at that truck stop.

Even though I’m married and have a family of my own, I still look forward to breakfast with my dad. Joe, Grace, and I used to go every weekend morning, but we’ve scaled back (to save money) to one morning per weekend.

Sometimes, our breakfasts at home are lackluster compared to the restaurant meals.

This was not one of those lackluster breakfasts. In fact, I would have been happy to stay home both mornings if Joe would’ve made these burritos two mornings in a row.

They were so good that I ate one for lunch, too.

Cooking Tip – I think the garlic and pesto tortilla made these burritos. I bought them in the bakery of my local big box grocery store.

Homemade Breakfast Burritos
  1. Saute onion, ham, and garlic in a bit of olive oil.
  2. Add eggs and spices to the skillet. As the eggs begin to set, use the spatula to scramble them. Continue to cook until the eggs are solid and beginning to brown.
  3. Place one tortilla on a microwave-safe plate. Cover with a damp paper towel and microwave for 20 seconds. (This makes the tortilla pliable.)
  4. Spoon about 3/4 cup of the egg mixture into the center of the warm tortilla.
  5. Heat salsa in the microwave for 30 seconds. Spread about two tablespoons of salsa on top of the eggs.
  6. Sprinkle with 1/4 cup of Mexican blend shredded cheese.
  7. Wrap up burrito.
  8. Repeat for the remaining burritos, and try not to eat all three by yourself.

  1. That is so very motivated of you!! I totally do not have that kind of energy when I get up in the morning – if I remember to cook the night before we can have muffins – or I might make pancakes but that is all I can muster up. 🙂
