Healthier Meatloaf

I’m in the mood for some comfort food, and nothing is more comforting than A1 sauce slathered over a big hunk of meatloaf. I don’t make meatloaf, mind you. This is 100% Joe’s department.

Raw meat is so not my thing.

We’ve never really loved turkey meatloaf, but we do try to cut fat and eat healthier foods. This version combines moist, juicy ground beef with ground turkey for a lighter twist on the original.  We both really like this version of meatloaf. We’ve been using this recipe for the duration of our marriage, but I don’t know where it came from. I imagine that it’s based on a recipe we found somewhere and tweaked. A lot.

Healthier Meatloaf
  1. Preheat oven to 350.
  2. Heat oil in a large skillet. When hot, add onion and garlic. Saute until translucent and beginning to brown. Remove from heat; set aside to cool.
  3. Combine onions with cheese and next 6 ingredients (including the egg) in a large bowl. Toss together until well blended.
  4. Mix ground meat together. Crumble over breadcrumb mixture. Mush together with your hands until it's evenly mixed.
  5. Spritz an 8"x4" loaf pan with cooking spray (or grease it with butter, but that would be not so healthy). Pack meat into loaf pan.
  6. Bake at 350 for 35 minutes.
  7. While meat loaf bakes, combine 1/2 cup ketchup, brown sugar, and mustard. After the first 35 minutes, spread ketchup mixture over the meat loaf and bake an additional 5 minutes.
