Green Beans with Caramelized Onions

We are right in the middle of let's eat vegetables right out of the garden season in Pennsylvania. green beansOr, we would be if our garden was producing any vegetables. Fortunately, we belong to the CSA from Spiral Path Farms, and we are picking up loads of veggies every week. The one vegetable that I could eat every day and night, regardless of where it came from, is the green bean. I love whole green beans. We've had green beans three times in the last week. They just always taste good to me. I really love this recipe. We first served it for a holiday – Thanksgiving? Christmas? I'm not sure, but I do remember that everyone came to our house, and I served this in my really cute blue and green striped bowl. And it was delicious.

Green Beans with Caramelized Onions
Servings
Ingredients
  • 1 teaspoon olive oil
  • 1 tablespoon sugar
  • 1 pounds onion - if using large onions, chop them coarsely. Pearl onions work nicely, whole or cut in half.
  • 1 pound green beans
  • 1 tablespoons dill chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper freshly ground

Instructions
  1. Heat oil and sugar together in a large skillet over medium-high heat. Add onions and saute until tender and golden brown, stirring often, about 10 minutes.
  2. Add green beans until crisp-tender, stirring frequently, about 3 minutes.
  3. Remove from heat and stir in dill, salt, and pepper.
  4. Serve immediately
Recipe Notes

*A note about dill - Stirring the fresh dill in after cooking preserves its flavor. Heating decreases the flavor of the dill.

  1. I love fresh green beans also. Canned are just a different thing altogether so if anyone thinks they do NOT like green beans based on canned, try fresh!

    Your recipe looks yummy – I will give it a try – but minus the dill (one of the few flavors I really don’t like).

  4. i’m going to try this this week! we have some green beans from andres’ garden, and dill from the garden too. could i use thawed frozen pearl onions? i have regular sweet onions from the farmers market too. thanks for sharing!
