Easy Mexican Pizza The worst part of my being gluten-free is the lack of convenience food.

When we've been working out in the garden for too long, and we come inside, covered with dirt and hungry, we have painfully few options. Joe put together these Mexican pizzas one day when exactly that happened. The sun was shining, and we gardened and played outside late into the evening. By the time we came in, it was after 6 o'clock. Joe made Mexican pizzas on Flatout Thin Crust Flatbreads (which the whole family loves) in under 15 minutes. (He made me a comparable one on a corn tortilla. It wasn't as good, but it was better than nothing.) These Mexican pizzas are packed with protein, but the crusts really are thin. You will want a nice big salad or fruit cup to round out your meal. You can find Flatout Thin Crust Flatbreads at Walmart (find them near you).

Instructions
  1. Preheat oven to 350. When the oven is hot, prebake the flatbread for 5 minutes.
  2. Brown ground beef and onion over medium heat. Stir and cook for a few minutes, until the onions are soft and the meat is no longer pink. Sprinkle taco seasoning over the meat and stir to coat.
  3. Place the Flatout Thin Crust Flatbreads on a baking sheet.
  4. In a medium bowl, mix a can of refried beans with the salsa. Spread bean mixture on top of the flatbread. Sprinkle beef and onions over the beans. Sprinkle generously with shredded cheddar cheese. Top with sliced olives and tortilla chips.
  5. Bake the pizzas for 4-5 minutes, until the cheese is melty.
  6. Slice and serve!
