Chicken Crust Pizza – The Best Low Carb & Gluten-Free Pizza Recipe

The best simple & easy low carb chicken crust pizza - Uses ground chicken to make a crispy crust, topped with shredded cheese and other toppings like pepperoni and mushrooms. Great for bariatric patients and those on a keto, paleo diet. Very healthy and high in protein.

The one single food I have missed the most since my bariatric surgery is pizza. I have missed it so much that I have occasionally picked the cheese and pepperoni off of a slice of pizza and eaten it, just to have the flavor of the pizza. If you’re new here, I had bariatric gastric sleeve surgery in early April 2017, and I have lost 190 pounds so far (16 months at the time of publishing). I read early on that bariatric patients who do not eat carbs do the best in terms of long-term success, so I do not … Read more

Quick & Easy Homemade Cheesy Meatballs

How to make the best homemade DIY cheesy low carb keto meatballs recipe - Healthy because they're baked in the oven. Great for spaghetti with sauce or on their own. Simple and easy with Italian breadcrumbs. Typically made with beef but could be made with turkey or pork or a mixture.

I realized recently that I have posted nary a recipe since my bariatric surgery in April 2017. It’s not that we stopped eating, nor that we have stopped trying new recipes.  I just haven’t been as into food since my surgery, if that makes any sense. I haven’t thought about it as much. I just show up to the meal, and I eat, and then I leave the table and leave the food behind. Except, with the flare up of my food addiction over the last six months, I sort of obsessed about some foods night and day, but those … Read more

Easy Gluten-Free Baked Ziti Recipe

I am super busy, working 40 hours a week as a Project Manager in addition to blogging, homeschooling, and attempting to do something along the lines of keeping up a home. I don’t say this to brag about my busy-ness or to say that I’m busier than you, because I expect that you’re just as busy. No one I know has time to spare. Joe and I work together really well, but we don’t have extra time to spend on meal preparation. We squeak out the moments we can when we can, and we always eat, but long everything from … Read more

Chicken Parmesan

Several times over the last few years, Joe and I have tried to switch to whole grain pasta. There are so many reasons to switch. Whole grains are healthier in general. The USDA’s MyPlate guidelines recommend making at least half of your grains whole grains. Whole grains contain more fiber than processed grains, and there is some evidence they can improve cardiovascular health. Unfortunately, our switch to whole grain pasta has not, to this point, gone very well. The whole wheat pasta we’ve tried has always been strange. Its texture has been off, sometimes excessively chewy or gritty. We’ve tried … Read more

Zucchini Parmesan

Zucchini Parmesan

I’m seeing zucchini recipes everywhere lately. I love seeing how other people use them during this time of year when they’re coming out our ears. We’ve eaten enough zucchini this summer to make us green. Zucchini eggs. Zucchini muffins. Zucchini cake. Cheese stuffed zucchini. Chicken and cheese stuffed zucchini. Zucchini with pasta and chicken. Pasta primavera. Zucchini bake. Veggie lasagna. Ratatouille. Batter-dipped zucchini. Pan fried zucchini. Grilled zucchini. I’m sure we’ve eaten it other ways, too, but I can’t remember them all. I made up this recipe to use some of our glut of the fabulous vegetable after we tired … Read more

Garden Lasagna Recipe

When I was a freshman in college, the cafeteria in the student union building served the most magnificent garden lasagna. The cafeteria was shut down during a renovation of the building, and it reopened as a fast food taco place. Or something. I don’t exactly remember. The point is that I love vegetable lasagna. I don’t care what you call it; I love lasagna with vegetables stuck into the layers. Depending on what veggies I have on hand, I may substitute different kinds of vegetables for the carrots or squash. In my personal opinion, the more veggies, the better! Print … Read more
