The best simple healthy eggplant lasagna recipe - This easy, vegetarian, low carb, gluten free veggie lasagna is meatless (but meat can be added if you want) and is perfect for a Whole30, paleo, or keto diet. It's made with ricotta and baked to bring all the flavors together. The recipe calls for eggplant, but you could substitute zucchini instead.
