Cajun Style Beans and Rice
  1. Heat oil in a large skillet over medium high heat. Add onion, salt, and pepper. Sauté, stirring often until onion is soft, 3-4 minutes. Stir in garlic and cook until fragrant, about 30 seconds. Add seasonings.
  2. Cook, stirring often, for 2 minutes. Mix in beans and rice.
  3. Continue to cook and stir until heated through, about 5 minutes. Add water if it looks as if the spices or rice are sticking and burning.
  4. Serve with a sprinkle of cilantro and shredded cheddar and a dollop of sour cream or Greek yogurt.
Recipe Notes

You may choose to add some chopped up, cooked chicken or ground beef to this recipe. That would increase the protein and make it a heartier meal.
