Dear Reader, I have been away from home. You should already have known that, right? My trip to Chicago began with the Back to School Nutrition Summit at the Kitchens of Sara Lee. I am still digging out of my luggage and my free products and product pitches and business cards and craziness, so I am not really able to write a normal post. However, Chef Jill at Sara Lee shared Kid Sushi with us, and I found it so brilliant that I wanted to share it with you first. Kid Sushi requires no special ingredients. None at all. It uses your regular old sandwhich ingredients, but prepares them in a fun way.

- bread (you already know that whole grain bread is best right?)
- Lunch meat sliced thin
- cheese slices Low fat
- Baby spinach or spring mix
- Carrots peeled and grated
Ingredients

- Cut the crusts off of the bread (save these for bird food or for bread crumbs or stuffing) and roll the soft part until it is as flat as possible.
- Lay one thin piece of meat and one thin piece of cheese on top of the bread.
- Put one layer of spinach or spring mix leaves on top of the cheese and top with a very thin layer or carrots.
- Roll up the ingredients, and cut it diagonally.
You could also add a very thin layer of mayo, mustard, or whatever your preferred condiment is on the bread, but the key is to keep it very very thin so that the layers roll up nicely.

Robyn – That’s a great idea. You could use any topping at all, as long as you spread it thinly.
Brenda – Great idea! The tortillas would be much flatter, so they’d turn into pinwheels rather than looking like sushi. But I think kids would like them either way.
My boys love sushi also.. will try it out with them when I get the time.
